Food Preservation: Back to Basics
With the resurgence of home gardening and preserving food at home, more and more first timers are trying their hand at putting produce away for the winter. Food preservation can be easy, but in order to be done safely, specific guidelines must be followed to ensure the food put up is safe and wholesome. Be sure to follow recommended guidelines when preserving food.
To help with the basics of food preservation, two publications are available at the local UT Extension Office. “Canning Foods” is full of information on canning fruits and vegetables, pickles and relishes and a section on jams, jellies and preserves. “Freezing Foods” contains all the procedures for freezing a variety of foods. Both publications are free and may be obtained at the Extension Office in the basement of the Courthouse.
